FIKA TIME: SWEDISH CHOKLADBOLLAR

This is not my usual post but I get asked for this recipe so much here that I thought I should just make it a little. easier and give it a home on my website.

It is no surprise to anyone that knows me: I love all things Swedish. Discovering the joys of Swedish chokladbollar during my fika days living in Sweden became a daily habit. However, indulging almost daily led me to search for a healthier alternative. So I made a healthier version that’s super easy to create and doesn’t contain any sugar or butter.

Ingredients:

- ½ cup rolled oats

- 20 pitted dates 

- 2 tbsp cacao powder

- 8 tbsp strong coffee 

- 2 tbsp coconut oil

- Shredded coconut to roll them in 

Here's how to make them:

1. Blend the oats in a food processor until roughly ground.

2. Soak the dates briefly in hot water to soften them and remove pits if they have pits.

3. Add all ingredients to the food processor and blend until a soft dough forms.

4. Roll the dough into small balls and coat them with shredded coconut.

5. Keep them stored in an airtight container in the fridge; they'll stay fresh for a few days.

I find these healthy alternatives might just be as addictive as the originals! Thought you'd love to give them a try too.
